From Jan. 15 to Feb. 16, Dinner with a View pops up on Ambleside Beach in West Vancouver.

Diners will be seated in heated, clear geodesic domes with a view of the ocean, Vancouver skyline and Lion’s Gate Bridge. The 20 domes will be transformed into terrariums with tundra, tropical, grassland, arid and boreal forest themes with faux flora, lighting and textiles.

A three-course dinner will feature local ingredients cooked by a yet unnamed “celebrity chef” and guests choose a meat, fish or vegan menu. Tickets are $199.99 for the dome (maximum six people) and $109.09 per person for the meal.

Coho Connect opens the third of a growing clutch of commissaries by mid-January. This one, at 1370 East Georgia St., comes with a cafe, serving some of the food and beverages produced by its members.

“It will provide restaurants with a lower cost and less risky way to enter the off-premise dining market,” says Andrew Barnes, CEO of Coho Collective, referring to delivered meals.

“Rising costs and low vacancy in Vancouver commercial real estate aside, commissaries aren’t just about the space, it’s about fostering a community that encourages creativity and innovation,” he says. (There are still spaces available for entrepreneurs.)

“We want our cafe to be a destination for people to try our members’ creations, almost like a test kitchen.”

In the evenings, part of the 10,000 square foot commissary becomes a pop-up event space. The 16-seat cafe will serve Elysian coffee, pastries, and grab-and-go lunches made by Coho members. If interested in joining the collective, go to cohocommissary.com for more information.
